Sea Bass with Barbecue Sauce

Ingredients

  • 300g of AVRAMAR Sea Bass
  • Salt
  • 100g Ketchup
  • 5g Tabasco Sauce
  • 20g Apple Cider Vinegar
  • 25g Soy Sauce
  • 25g Honey
  • Lemon Zest
  • 80g Potatoes
  • 5g Thyme
  • 20ml Olive Oil

Method

(2 Portions ) 

Preparation: 60 minutes 

  1. Cleaning the fish: Begin by removing the scales, guts, and gills from the fish. To butterfly it, make a cut along its belly and carefully remove the backbone. Additionally, make a small incision near the head to help flatten it. After preparing the fish, season it with salt and then place it in the refrigerator with the skin exposed. This will allow for dehydration.
  2. For the Barbecue Sauce: Combine ketchup, Tabasco, vinegar, Soy Sauce, Honey, and Lemon Zest.
  3. Clean and wash the potatoes. Place them on a baking tray and season with salt, thyme, and olive oil. Bake at 140°C (285°F) for 45 minutes.
  4. Brush the fish with the sauce and grill it for 5 minutes. After that time, remove it from the grill and brush with more sauce; repeat this process 2 times.
  5. Serve the fish accompanied by the roasted potatoes.
