Sea Bream with Criolla Sauce and Miso Mayonnaise

  • 300 g Sea Bream
  • Salt
  • Extra Virgin Olive Oil
  • 30 g Red Onion
  • 30 g Tomato
  • 10 g  Celery
  • 1 Lime
  • 10 g Cilantro
  • 50 g Mayonnaise
  • 5 ml Soy Sauce
  • 25 g Miso Paste


Preparation: 40 minutes

  1. Fish preparation: Remove scales, innards, both fillets, remove bones, and cut into 2×2 cubes with skin.
  2. Thread all the fish cubes onto a skewer, pressing them tightly together. Season and cover with olive oil.
  3. In a bowl, mix red onion, celery, and tomato finely diced. Season with lime juice, salt, finely chopped cilantro, and olive oil.
  4. In a bowl, mix mayonnaise, soy sauce, and miso paste. Reserve in a pastry bag.
  5. Cook the skewer on a hot grill for 5 minutes until easily detached. Turn the skewer and cook for another 3 minutes. Reserve on a tray and brush with olive oil again.
